Sago Dosa/ Sabudana Dosa

For the final week of this Blogging marathon , bookmarked recipes is the chosen theme.

My bookmarking runs into pages and I thought this was a great opportunity to try some of them. So here is the first one.

INGREDIENTS

Recipe Source:Flavours and Colour

Par Boiled rice 3cups
Whole white urad dal 3/4 cup
Sago 3/4 cup
Aval/Poha 3/4 cup
Salt To Taste
Oil For making dosa

PREPARATION

Soak the rice for 3-4 hours

Soak the dal and 1/4tsp of fenugreek seeds for 3hours

Soak the poha and sago separately for 3 hirs

Grind each one separately in a grinder into a very smooth paste. Mix everything with salt and let it ferment overnight

Next morning heat a dosa griddle and pour a ladle full of the batter. Do not spread

When the holes start to appear drizzle oil around , close it with a pan lid and cook it in low flame for a minute . Do not flip over

Serve warm with chutney and sambhar

Perfect Guacamole

The search for the perfect guacamole recipe took me to this and this recipe is indeed perfect. Check out her blog for step by step pictures

INGREDIENTS

Avocado 1
Salt 1/4tsp
Lime juice 2tsp
Onion 1
Green chilly 1
Cilantro 1tbsp
Pepper powder 1/4tsp
Cherry tomato 2-3

PREPARATION

Cut the avocado in half and remove the seed. Scoop out only the pulp and mash it with a fork and keep it in a bowl

Cut the onion, tomatoes and chillies finely

Add everything to the mashed avocado and serve with tortilla chips or bread of your choice .

I just love to eat this as a salad

Mandakki Oggarane

My childhood has been in interior Karnataka and Mandakki Oggarane was an every day naashta in most homes of  Bijapur. I think it is part of the cuisine of Raichur, bijapur ,Davangere etc.,

INGREDIENTS

Pori/Puffed rice 1 cup
Onion 1 cut finely
Green chillies 2 cut
Roasted gram dhal/ Pottukadalai 3 tbsp
Mustard seeds 1 tsp
Black gram dhal  1 tsp
Peanuts 1tbsp
Turmeric powder  1/4 tsp
Oil 1 tbsp
Coriander  2 tbsp
Curry leaves few
Salt to taste

PREPARATION

Soak the puffed rice in enough water for 10 minutes. Squeeze it and keep it in a bowl/plate.

Grind the roasted gram dhal into a very fine powder

Cut the onion and chillies finely

Heat oil in a pan and when sufficiently hot add the mustard seeds and when it splutters add the black gram dal and peanuts and curry leaves, saute for 1 minute

Now add the onion and chillies and saute till the onions become transparent

Add the turmeric powder and mix well

Now put the squeezed puffed rice and salt. Mix well.

Continue to cook in a low flame for 3 minute

Mix in the Roasted gram powder.

Top it with cut coriander and serve!!

Twisted Pull Apart Pizza

Amother interesting shape  for the regular pizza. Kids will love it all the more…well, Here the adults like too.

INGREDIENTS

All purpose flour 1 1/2cups
Vital Wheat Gluten 1tbsp
Water nearly ¾ cup
Active dry yeast 1 1/4tsp
Sugar 1Tbsp
Salt 1tsp
Olive Oil 2Tbsp
Marinara sauce 3tbsp
Onion 1
Yellow,Green,Red peppers 1each
Black pitted olives Few
Oregano 2-3tsp
Chilli Flakes 2tsp
Mozarella As required

PREPARATION

  • Put the yeast and sugar in ½ cup of luke warm water and keep it in a warm place to froth up. It might take nearly 10 minutes
  • Meanwhile add the flour, salt, gluten to the bowl of a stand mixer and mix for 1 minute
  • When the yeast has frothed up add the yeast water mixture,remaining ¼ cup of water and oil and start kneading the dough using the dough hook.
  • Knead it to a pliable dough. It takes 7 minutes in my Kenwood mixer.
  • Take it out and transfer it to a well oiled bowl, Cover and let it double. Takes nearly an hour
  • Cut all the vegetables evenly
  • When it has double, transfer it to a wooden board, make 2 balls out of the dough, and roll it into an approximate 2 circles
  • Place one dough circle on a prepared tray
  • Spread the marinara complete on the circle leaving only the outer edges

  • Now evenly arrange the finely cut vegetables on it, sprinkle the grated cheese, oregano and chilli flakes, and cover it with the other circle. Seal the edges thoroughly
  • Now keep a circular disc or a tumbler in the center and make a marking

  • Now make even sized wedges all around as shown

  • Twist each wedge twice

  • Allow it to prove for another 20 minutes

  • Preheat the oven to 200C
  • Now brush the surface with milk and bake for 20-25 minutes
  • Awesome twisted pizza ready

Penne In White Sauce

For the day 2 of pizza and pasta it is penne in white sauce.Doesn’t it look sinful?

INGREDIENTS

Penne 1/2cup
Water enough to boil
Onion 1cup
Green pepper 1
Red pepper 1
Basil 1/4 cup
Butter 1tbsp
All purpose flour 2tsp
Milk 1 cup
Oregano 3tsp
Chiili flakes 2tsp
Garlic 2 pods
Salt as required
Oil 1tsp
Processed cheese 2tbsp

PREPARATION

Boil penne in enough water till ¾ th  cooked. Drain and keep aside

Cut all the vegetables into small cubes

Heat oil in a pan and saute onion, green pepper, red peepr till semi cooked. Keep aside

Heat butter in another pan.

Now add chopped garlic and saute till a good flavour comes out

Now add all purpose flour for this and saute well

Add milk and continuously stir so that no lumps are formed

Now put the oregano, chilli flakes, basil and salt into this

Put the cooked vegetables and continue to cook in very low flame

Add cooked penne a, salt and cheese. Mix well.

Switch off the fire

Serve hot

Sunflower Pizza

When Harini Shared the recipe on Home Bakers Guild in Facebook, I knew I would bake this. It was too irresistible to not bake. So here is the recipe as given by her

INGREDIENTS

Line a appropriate baking tray with parchment paper

Transfer this rolled dough carefully to the prepared tray

Now make slits in the center  ONLY as shown

Around the circumference of the circle spread the marinara sauce

Now arrange all the veggies as shown

Now grate the cheese all over

Now take each wedge that was formed earlier due to the slicing and fold it over the arranged vegetables.Carefully do this so that you do not disturb the shape

When all the wedges are folded, cover it loosely with a kitchen towel and allow it to double again. Took around 30 minutes

Now Preheat the oven to 200C

Brush the dough wedges with milk for the brown crust

Bake it for 20 minutes or until done

Hara Bhara Kebab

For day 2 of the restaurant menu it is a starter. This is one starter which my daughter orders in any restaurant and I tried it and she like it too.

INGREDIENTS

Palak 2bunches
Mint leaves 1/2 cup
Coriander leaves 1/2 cup
Cloves 2
Cardamom 2
Cinnamon 1/2” piece
Ginger 1/2”
Garlic 3 cloves
Green chillies 3
Onion 1/2
Turmeric powder 1/4tsp
Chilli powder 2tsp
Roasted gram dal 1tbsp
Bread crumbs 1/4cup
Paneer 1/2cup
Potato 2
Oil 2tbsp
Salt To taste
Chat Masala 1tsp
Oil For frying

 

PREPARATION

Blanch palak. Squeeze it completely. Keep aside

Cook potato in a cooker, Let it cool. Remove the skin and mash well

Crumble the paneer

Heat oil in a pan, add cloves, cardamom and cinnamon, saute till a good aroma emanates.

Now add mint leaves,coriander leaves, chopped onion, palak and dry powders in the order and saute for 2 minutes

Now add cooked potato and paneer, mix well and continue to cook on low flame for few minutes

Add salt and chat masala. Let it cool

Now grind it coarsely

Add bread crumbs and make patties

Shall fry on both sides

Serve warm
